Dr. G’s Salty Chocolate Nick Cookies

1 ¼ cups blanched almond flour

½ cup coconut flour

½ teaspoon ocean salt + more for sprinkling

½ teaspoon sodium bicarbonate

½ teaspoon xanthan gum

⅔ cup grass-given butter or coconut oil

¾ cup swerve

1 egg

one and a half teaspoon vanilla flavoring

½ cup chopped bittersweet chocolate

½ cup shelled pistachios

Preheat oven to 350. Line a sheet tray with parchment. Put aside.

In a tiny bowl, whisk together the dry ingredients, and hang aside.

Inside a mixer, or perhaps in a bowl having a hands mixer, whip together the butter and swerve until fluffy, a couple of minutes.

Add egg and vanilla still combine, for an additional minute.

Add chocolate and pistachios and fold to mix.

Roll dough into 12 balls, and flatten slightly on the baking sheet. Sprinkle with salt and bake 12-18 minutes before serving.
