Refreshing asparagus salad that goes with ANY meal

Shaved Asparagus Salad:

Ingredients (Serves 2):

Juice of just one lemon

1 Tablespoons of champagne vinegar

1 teaspoon dijon mustard

2 Tablespoons of walnut oil

2 cups shaved asparagus*

1 cup shaved carrots

¼ cup shredded mozzarella dairy product

¼ cup toasted pine nuts

¼ cup sliced fresh mint

Cracked pepper and ocean salt, to taste

*to create this, shave asparagus into thin strips having a vegetable peeler (or cut having a very sharp knife)

Instructions:

In a tiny bowl, whisk together the fresh lemon juice, vinegar, mustard, and walnut oil. Put aside.

Toss together the carrots and asparagus and arrange on the plate.

Drizzle with dressing, and top with cheese, nuts, and mint

Season to taste, and serve.
