Curried Cauliflower Fritters
Ingredients:
¼ cup essential olive oil, plus much more for frying
1 large onion, diced
2 cups cauliflower grain
1 teaspoon paprika
one and a half teaspoon curry powder
½ teaspoon cumin
1 teaspoon garlic clove powder
1 teaspoon ocean salt
2 omega-3 eggs
½ cup cassava flour, plus much more when needed
1 teaspoon baking powder
Pesto and prosciutto, for serving
Instructions:
Heat oil inside a large skillet over medium heat.
Add onion, and prepare until translucent, adding cauliflower grain, spices, and salt.
Prepare 3-4 minutes, until aromatic and tender, then let awesome to 70 degrees.
Transfer to some bowl, combined with the eggs, cassava flour, and baking powder, and blend until a thick batter has created (you may want to increase the cassava flour to thicken).
Heat a little bit of oil inside a skillet, over medium heat therefore it just jackets the foot of the skillet
Add heaping spoonfuls of batter, departing room for this to spread a little.
Prepare 3-4 minutes per side, flipping when golden brown.
Serve plain, sprinkled with ocean salt, or (my personal favorite) capped with prosciutto and pesto.
